While I've never had a roller bag stocked like a minifridge, I do frequently bring lots of snacks to cons. You have to keep your energy up, and if you're tabling solo, you have to close up shop every time you leave to get anything. Food at cons can also be prohibitively expensive, so bringing your own supplies can mean the difference between turning a profit and barely covering expenses.
As an additional note about this strip, I have had problems with excessive baggage at cons. I almost couldn't get on a train one time because my con supplies were too heavy (perhaps a comic for another day!). Once in-person cons start back up, I hope to have my stock adjusted to more reasonable levels.
